A little intro to why it’s a great cookie!
This cookie is a raw beauty cookie, its made of oat cookie dough and vitamin rich raw chocolate. Oats are a pre-biotic, which means they support gut health, and help pro-biotics do their work better. Healthy gut health means more beauty and more guts to do all the things your heart wants to do!!!
Prep for sprouted oats

This preparation takes 24 hours! I am telling you this now, do it once every season. Soak as many oat groats in water overnight as you can, then dry them in dehydrator, or oven setting less than 50 degrees celcius, ideally just the fan until bone dry, it will take 8 hours or overnight again, you are making them more digestible, this process is called “Activating or sproating”. Once you have the oats sproated or activated, now you have a healing ingredient. Just grind the oats in a coffee grinder whenever you need to make oat flour.
Cookie dough ingredients
1 cup raw activated oat flour, (see directions above)
1/3 cup honey (the best honey you can find)
½ teaspoon sea salt
1 teaspoon raw virgin coconut oil
Mix all the ingredients together with your hand until you have a dough, roll into a ball and the flatten between two baking sheets, roll with a dough roller on top of the baking sheet so you don’t experience the sticky dough. Then make the shapes out of the dough I usually press with a heart. Slip the shapes and the baking sheet underneath them into a tray and chill in the freezer while you make the chocolate!
Chocolate dip for the cookie dough
70grams raw cacao butter (http://navitasnaturals.com/product/434/Cacao-Butter.html)
Raw cacao powder (I buy Navitas from Nature Valley, or Organic Supermarket or al osra, or giant (Nature Valley in Juffair are great)
I don’t add sweetner here you don’t need it because the cookie dough is very sweet.
Put the cacao butter in a large bowl and place it in the oven at 40 degrees celcius for 20 minutes. When the butter is melted keep adding cacao powder and mixing until the chocolate is thick enough to coat your mixing utensil.
Now remove shaped cookies from freezer and dip them in the chocolate and place on a tray lined with a baking sheet so it doesn’t stick when its ready! Chill again when you finish.

Practice makes perfect, I had done this several times before I got it – also these can be in the shape of balls – so easy.
